With summer approaching fast everyone is looking forward to picnics, cook outs, and holiday events that usually require you to bring a covered dish. One of our favorite sides to use when we have picnics at camp is Macaroni Salad.
You will need:
16 oz. uncooked elbow macaroni
2 medium carrots
1 onion
1/2 green bell pepper
1 small red bell pepper
3/4 c. chopped celery
2 c. mayonnaise
14 oz. sweet condensed milk
1/2 TBSP black pepper
1/2 c. white vinegar
2 tsp. salt
This recipe is best made the night before your event to allow the the liquid to absorb. First you will bring a pot of salted water to boil, add the macaroni and cook until tender. Do not over boil. When cooked run the pasta under cold water until the pasta is cool.
Shred the carrots. Chop onions, peppers and celery. Combine them all in a large bowl.
In a different bowl combine mayonnaise, milk, vinegar, salt and pepper.
Combine the vegetables and dressing mixture.
Add macaroni and stir gently. Cover and refrigerate at least 8 hours. The recipe may look wet at first but will be perfect after it sits.
